Tradition and Modernity in the Culinary World: Reflections on Sustainability and Communities

By Arlene Stein, Terroir Hospitality Founder

Sustainability and Ecology in the Hospitality Sector

Sustainability and ecology have become increasingly significant to the hospitality sector. Chefs and restaurateurs are constantly seeking innovative approaches to mitigate their impact on the environment. Ideas around the circular economy are being applied to become more efficient and reduce waste and costs. Although the industry has predominantly focused on local issues, there is a growing recognition of the importance of understanding global implications, especially the threats posed by climate change. Knowledge sharing is crucial to have a significant impact and support an ever-shifting global food system.

The Role of Chefs and Culinary Professionals in Policy Debates

Our food system intersects with the global economy. Chefs and culinary professionals, as influential figures, hold a unique position. They serve as tastemakers and storytellers, shedding light on the factors shaping their businesses and influencing consumer behavior. Through media, marketing, and collaboration campaigns, they communicate powerful messages about sustainability and cultural significance. By designing menus to support sustainable practices and using their purchasing power, they can significantly impact small producers and contribute to broader policy debates on sustainability and ecological issues.

Collaboration Between Large Food Companies and Small Entities

Collaboration between large food companies and smaller, more sustainable entities can be mutually beneficial. Big food companies can learn from the practices of individual chefs, small restaurant owners, and small farmers to prioritize local and sustainable sourcing, improve supply chain quality, and introduce sustainable menu items. Such collaboration can lead to joint advocacy for regulations supporting ethical sourcing, fair labor practices, and environmental conservation, highlighting the value of working together towards shared goals.

Terroir Talk’s Contribution to Environmental and Social Practices

Terroir Hospitality operates as a platform that fosters knowledge exchange, showcases best practices, and connects like-minded individuals through networking and collaboration. Our programs serve as vital forums for discussing challenges the culinary industry faces in addressing environmental emergencies. We emphasize the concept of terroir, acknowledging the unique characteristics of a region's soil, climate, and environment. Our initiatives promote local and sustainable ingredients, responsible sourcing, and the sharing of traditions and narratives, contributing to a cultural shift within the culinary world.

Reflections on the Culinary Gatherings at Mount Nemrut 2023

Organizing the Mount Nemrut event in the Adıyaman region, which experienced a terrible earthquake in February 2023, added new dimensions to our understanding of tradition in food and agriculture. The region's rich culinary heritage is influenced by historical interactions and the pride stemming from these traditions. The event highlighted the importance of tradition in shaping a community's sense of self and preserving its identity. Despite the challenges posed by modern developments and environmental concerns, the community's resilience and hospitality shone through, emphasizing the power of food as a universal language.

The Potential of Culinary Professionals as Change Agents

Chefs and culinary professionals have the potential to instigate change at local and global levels. By fostering discussions, exchanging ideas, and pooling resources, they can contribute to food sustainability and address climate change challenges. An ideal culinary event would bring together professionals from around the world to design improved systems for our world, considering cultural traditions and sustainability. A Global Culinary Sustainability Summit could inspire concrete actions towards a more sustainable and culturally conscious culinary landscape.

The interplay between tradition and modernity in the culinary world is crucial in addressing sustainability and community issues. Chefs and culinary professionals play a significant role in shaping the future of food systems, influencing policies, and fostering global collaboration. Through platforms like Terroir Talk and events like the Culinary Gatherings at Mount Nemrut, the culinary community can lead the way in promoting sustainable practices and preserving cultural heritage.
