Maciej's work revolves around historic culinary reenactment. He specializes in the cuisine of the eighteenth and nineteenth centuries and gained significant experience working at restaurants in London.
These days Maciej works with recipes from the oldest Polish cookbooks and leads reenactment events during which he translates a world of forgotten tastes into the language of contemporary culinary sensitivity. An advocate of old varieties of vegetables, fruits, and wild edible plants, Maciej' is also a passionate historian and a gardening enthusiast.
