In 1985 Albert discovered what work meant after he dropped his studies to become part of elBulli restaurant brigade. After an apprenticeship of two years throughout all the different kitchen sections his interest is finally focused on pastry.

Throughout his time at elBulli, Albert also performed stages in the kitchens of: Michel Bras, The Fat Duck, Mugaritz, Martin Berasategui and Charlie Trotter amongst others.

After finishing at elBulli Albert opened many new concepts in Barcelona including a gastronomic cocktail bar called 41º and a tapas restaurant called Tickets.

In November 2013, Albert is recognised by TIME Magazine as one of the 13 most influential people in gastronomy, soon after both Tickets and 41º are awarded Michelin Stars and appear in the World's 50 Best lists.

Following on from their successes, Albert opened Enigma in January 2017 which was awarded a Michelin Star within its first year of opening. 

Albert continues to expand his gastronomy portfolio and recently announced a multi-space project in New York in collaboration with José Andrés. The opening is expected at the beginning of 2019.
